An a-glucan was extracted with cold water from the seed of azuki bean (Phaseolus angularis Wight), purified through a column of DEAE-Sephadex A-50 (C1- form), and characterized by methylation and enzymic hydrolysis. The weight average molecular weight of the a-glucan was determined to be approximately 20, 000 by high-performance liquid chromatography. The a-glucan and its /3-limit dextrin were digested respectively with pullulanase and then isoamylase. The hydrolysate of each step was subjected to gel permeation chromatography to reveal the distribution of unit chain and interior chain, respectively. A ratio of A chain to B chain of the polysaccharide was found to be 2. 1, which was relatively large value compared to that from the seeds of italian millet, buckwheat and so on.
