The nature of rupture of potato starch granules induced by ultrasonic irradiation (400 kHz, 5W/cm<SUP>2</SUP>) was studied. Microscopic observations showed that the mode of the rupture depended on the size of starch granules. Many deep conical pits were observed in smaller granules but not in larger granules. The size dependent behavior resulted from the ultrasonic attack was also demonstrated by the difference in the extent of solubilized fraction during the irradiation. However, the gel permeation chromatographic analysis of irradiated large (d>40μm) and small (d<25μm) granules showed that the molecular degradation proceeds with radiation time in the same manner irrespective of the granular size. Thus, the difference between the mode of ultrasonic attack on the smaller and larger granules suggests that these granules differ in physical structure.
