(A) Several factors which influenced upon the inclusion were investigated. (1) Methanol was the only effective carrier-solvent among 7 kinds of solvents tested, when dried starch was used as s host. (2) The moisture contained in methanol inhibited remarkably the inclusion.(3) The highest amount of benzaldehyde (BA) was included when the air-drying was carried at 40-60°C. (4) The constant, large amount of BA, about 110 mg/g host, was included on the BA solutions ranging in concentration from 10 to 60% . (5) The included amounts were compaired on the 11 kinds of aldehydes. Aromatic aldehydes which did not possess a side chain containing hydrocarbon a group with 2 or more carbon atoms were maximally included. (6) The included amount of BA were compaired on 5 kinds of starches as the host. Potato starch included the largest amount of BA. The defatted starches included more BA than the respective native starches except potato starch . (B) On the air-drying process in the standard method, the inclusion was initiated when excess methanol was evaporated and methanol remained only in starch granules. (C) Aldehydes included in starch granules were protected from the oxidation by air over the long period in dry atomosphere.
