Samples of arrowhead (Sagittaria turifolia L.) tubers were harvested at one month after planting of the seed tubers and every two weeks thereafter (14 times in total). Lyophilized slices and starch granules were prepared from the tubers. Each slice was observed by scanning electron microscopy (SEM) and the properties of the starch granules were examined. The results obtained were as follows: 1) The average particle size of the arrowhead starch granules ranged from 5.3 μm to 11.0 μm, and increased in the early developmental stage of tubers (from July 17 to August 29). The most common particle size was 6-8 gum on July 17, 4-5 μm on August 1 and 10-20 μm after August 15. 2) The susceptibility of arrowhead starch granules to hog pancreatin was not very similar to that of normal maize starch granules, but it was relatively high. 3) The initiation temperature for gelatinization of arrowhead starches, as judged on photopastegraphy, tended to be lower in the later stages of development than in the earlier stages. These results indicate that the soil temperature under which arrowhead tubers are grown affects the initiation temperature for gelatinization of the starches deposited. 4) The amylose content of arrowhead starches determined by the amperometric iodine titration method ranged from 28.4 to 32.6%. 5) X-ray diff ractography of the arrowhead starches showed A-type patterns throughout the tuber development.
