We identified the isolated 1, 3-pentadiene producing molds and investigated the distribution of these molds in raw materials used for "Surimi-based products". The results were as follows. 1. One strain (P-1) isolated from "Surimi-based products" as 1, 3-pentadiene producing mold was identified as Penicillium cyclopium and the other one strain (A-1, stock culture) was identified as Aspergillus niger. 2. These molds did not find in raw materials used for "Surimi-based products". 3. Of a total of 48 standard authentic strains and stock cultures of molds and yeasts tested, 8 strains of Aspergillus sp. and 2 strains of Penicillium sp. produced 1, 3-pentadiene. We considered that "Surimi-based products" were contaminated by the 1, 3-pentadiene producing molds after heating process. We must therefore pay attentions to the contamination with molds in the plant.
