It was shown by the action of carboxypeptidase (CPase-A) upon saliva parotin A that only threonine was released as the free amino acid, in a yield nearly 1.4 moles from 1 mole of the protein. On the other hand, it was confirmed that saliva parotin A possessed three N-terminal amino acids, namely, phenylalanine, alanine and glycine.
