It was reported in the previous paper1) that the proteolytic enzymes in fin whale pancreas are not essentially different in the activity from those in the land mammals after the activa-tion process. In this paper, proteolysis products in the extracts from sperm whale meat treated with the pancreas activate proteolytic enzymes are described. The total solid, total N, total protein N and amino N in the extracts treated with the enzymes are given in Figs. 1, 2. The free amino acid compositions of the extracts treated with the enzymes are given in Table 1. (Incubation temp., 45°C. Time of proteolysis, 60 min. The relative amount of the enzyme added, 1%) Of free amino acid, methionine, isoleucine, leucine, tyrosine, phenylalanine and arginine were greatly increased in the amount by the enzyme treatment. The enzyme treatment was characterized by production of little bitter taste from meat.
