Green tea leaves were piled in 150mm. depth and were withered in through-flow air current. The effects of air rate, humidity and temperature on the withering rate were examined.<BR>The relation between water content of tea leaves and withering time was shown by the following equation.<BR>W=aent×10-8<BR>W: water content of leaves (D.B.)%<BR>t : withering time min.<BR>a : initial water content of leaves<BR>n : coefficient<BR>The coefficient "n" was determined by the air rate, humidity and temperature. The effects of these factors on the "n" were shown in two following tables.
