Amino acid analyses of wheat α-amylase purified from germinating seeds by affinity chromatography showed a high content of a modified lysyl residue. The modified residue was identified as N-ε-trimethyl lysine. The presence of trimethyl lysine in α-amylase is discussed in terms of isozymes.
