In volatile organic compounds and olfaction analysis, electronic nose instruments have been estimated as reliable and rapid tools to assess the sample quality. The analysis by fingerprint mass spectrometry (FMS) is one approach used in the e-nose technology. To show the performances of the Alpha MOS αKronos, based on fingerprint mass spectrometry technique, Cognac samples have been analyzed. By comparing a good quality sample of Cognac with an off-product, the αKronos can lead to identify the offending molecules. The selection of mass fragmentation available with the αKronos allows us to eliminate matrix effects and provides a mean to track only the molecules representing a problem. In this application the αKronos is demonstrated to be a fast and reliable tool for quality assessment of alcoholic matrices. Compared to sensory panels or expert tasters, FMS is also more objective.
