1. The influence of pH on the activity of agarase was investigated, and it was found that the optimum pH for the liquefying activity is about 6.0〜7.0 and that for the saccharifying activity about 7.0. From these results the optimum pH of agarase is confirmed as 7.0. 2.The relation between hydrogen ion concentration and stability of agarase was studied, and it was recognized that there is no remarkable difference of the activity of agarase in range of pH 6.0〜9.5,while it greatly decreases below pH 5.0.
