1) The optimum temperature of agarase for the saccharification of agar is about 40℃. The agarase activity is remarkably inhibited at the higher temperatures than 50℃, and almost lost by heating at 55℃ for 30 min or at 60℃ for 10 min.The optimum temperature of agarase for the liquefaction of agar is 40℃, and at the temperatures from 35 to 50℃ no remarkable difference of activity is found. However, its activity is almost lost at 60℃ in 10〜30 min.2) Agarase is more stable at 35℃ than at its optimum temperature.
