We studied the chemical method of obtaining shell meat from bivalves. In order to open the shell, it is necessary to liberate the adductors from the shell without destroying the opening power of the ligament.To attain this object, about fifty kinds of organic and inorganic compounds were tested, and it was found that the dilute solution of sodium hydroxide was the suitable one.The enzymic action of shell meat can be maintained almost as usual during the maceration in the alkaline solution, if the duration of the alkaline treatment is suitable.
