An attept to digest the associated fiber of coconut cake was made by using a cellulase preparation from Trichoderma viride, Meicelase.Two kinds of coconut cake from the Central Food technological Research Institute, India used as samples in this experient were brown and white materials which had been obtained in the form of a fine powder through an expeller-press and Krauss-Muffei processes, respectively.When the brown coconut cake was incubated with 0.5 per cent Meicelase-P solution at a coneentration of 5 per cent in a reaction mixture at 40℃, nearly 80 per cent of the initial fiber was decomposed in 48 hours. Furthermore it was found that more than 70 per cent of the initial protein was extracted at the same time.A sample of the hydrolysis product was obtained as soluble fine brown powder by spray-drying the filtrate from the digest of the brown coconut cake.Examination by paper chromatography revealed that the major parts of the water soluble sugars from the white and brown coconut cakes were composed of fructose, glucose, galactose, sucrose, melibiose, and raffinose.The existence of α-galactosidase in Meicelase was demonstrated using raffinose and melibiose as substrates.Thus the results obtained in this experiment suggest a possibility of the utilization of coconut cake for human food when it is treated by cellulase preparations such as Meicelase.
