The author has studied on the general conditions governing β-carotene synthesis by the red yeast, Torula Shibatana OKUNUKI.The substances which brought remarkable increase in production of β-carotene could not be found in several agricultural products, but the products for protein resources increased it a little.Defatted soy-bean hydrolysate stimulated the production of β-carotene most of all.Various carbon compounds were tested to replace glucose, and glycerol was found to be the most effective carbon source for both the growth and the carotene production. Arabinose, xylose and soluble starch supported nearly normal growth and carotene production. According to the results obtained in culture media containing various nitrogenous compounds, tryptophane, asparagine, arginine, histidine and leucine stimulated carotinogenesis.The effect of the N : glucose ratio of the media on the growth and carotene production by aeration process was also observed. When the glouce concentration was kept constant(2%) and N concentration was varied, the yield of yeast increased until the N : glucose ratio reached to 2.74%, and 65 g of dry yeast which contained 7.4 mg% of β-carotene was obtained from 100 g of glucose.
