The presence of a precursor of β-methyl-γ-octalactone, one of the important flavor components of distilled liquours, was confirmed. A component of the precusor obtained from the hydrolysate in baryta solution was identified as 3,4-dihydroxy-5-methoxybenzoic acid. From the results of GC-mass analysis the molecular weight of the precursor was determined to be 340. The structure of the precursor was identifed as 2-methyl-3(3,4-dihydroxy-5-methoxybenzo)-octanoic acid.
