A brown-colored fraction containing heme was separated from the lipoprotein-free plasma of Japanese eel (Anguilla japonica). This fraction prevented the oxidation of very-low-density lipoprotein incubated with CuSO_4 ranging in concentration from 0.5 to 3μM. The antioxidant activity seemed to derive from the heme-binding proteins of the brown-colored fraction.
