The effects of ascorbic acid on the deodorizing activity of polyphenols against methanethiol (CH_3SH) was investigated. The addition of ascorbic acid caused loss of the deodorizing activity of polyphenols against CH_3SH. It was assumed that ascorbic acid prevented the oxidation of polyphenols, which is the essential step for the deodorizing action against CH_3SH and so suppressed the deodorizing activity.
