Many yeast strains can assimilate cellobiose but only a few can ferment this substrate.Fermentations of cellobiose, glucose, and glucose-cellobiose mixture by 10 yeast strains were monitored. Eight out of the 10 strains were able to ferment cellobiose. However, there was an inhibition of the cellobiase activity of these 8 strains during glucose-cellobiose mixture fermentation.
