We demonstrate near-infrared one-color nonvolatile photorefractivity in stoichiometric LiNbO3 doped with Mg above threshold under ultraviolet (UV)-light preexposure. The dynamics of the diffraction efficiency and two-beam coupling during the recording and fixing processes are investigated. It is found that the dynamics of the grating buildup and fixing processes are strongly dependent on the writing time, which can be explained qualitatively by the proposed two-center model. A recording sensitivity as high as 0.23 cm/J is obtained at 780 nm.
