Alminium chloride had been used as food additive in fermented soybeans to develope yellow pigments. In order to know the mechanism, the reaction of flavonoid compounds in soybeans with alminium chloride was studied.<BR>Daidzein did not react with alminium chloride, but genistein formed a yellow pigment with it. The pigment was soluble in EtOH, Me<SUB>2</SUB>CO, EtOAc and pyridine, but insoluble in CHCl<SUB>3</SUB>, <I>n</I>-hexane, Et<SUB>2</SUB>O and benzene. It was composed of 3 moles of genistein and 1 mole of Al, and melted at 276°C.<BR>It was assumed that the hydroxy radical at 5-position and the carbonyl radical at 4-position of isoflavone participated in the chelation with Al<SUP>3+</SUP>.<BR>EtOH solution at pH 4.5 of the pigment gave a fluorescence spectrum with an exitation maximum at 420nm and an emission maximum at 480nm.
