1. Sweet pepper was cultured under vinyl film covering and non covering. Quality such as color or hardness and vitamin C content of sweet pepper fruit cultured under vinyl film covering was inferior to control.<BR>2. Sweet pepper fruit was stored under room temperature and in ice box of 7°C. Especially, quality of vinyl film covering trial became inferior and vitamin C content decreased at room temperature. And its amino acid pattern similarity showed considerable change as compared with that of fresh sample. But, for 12 days of cold storage, quality, ascorbic acid content of both trials showed such little change as happened in vinyl film covering trial under room temperature. Little change of free amino acids was found, too.<BR>3. Storage ability of sweet pepper fruit cultured under vinyl film covering was known to be bad as compared with control. But when it was stored under cold temperature, its freshness was showed to be kept. As production of vegetables by vinyl film covering or systematization of horticulture will develop on a large scale from now, research about cold storage or cold chain will become important increasingly.
