The action of potassium sorbate was examined on O2 uptake with the substrates which are mainly the tricarboxylic acid (TCA) cycle members and on growth of Ps. aeruginosa. The O2 uptake with acetate, pyruvate, lactate, oxaloacetate or α-keto-glutarate as substrate was inhibited but its uptake with malate or glucose was not inhibited by sorbate at pH 6.8 and 5.3. From these data, sorbate appears to exert its inhibitory action at the site where Coenzyme A is involved in glycolysis and the TCA cycle. Growth was inhibited by sorbate less in organic nitrogen media, such as bouillon, yeast extract or casamino acids, than in inorganic nitrogen media. This indirectly supports the concept of CoA involvement in sorbate inhibition, because organic nitrogens are better substrates for CoA biosynthesis.
