The action of potassium sorbate was examined on growth, respiration and synthesis of protein, RNA and DNA of Ps. fluorescens, a psychrotroph and food spoiling bacteria, which is more sensitive to sorbate than Ps. aeruginosa. The concentration of sorbate needed to inhibit O2 uptake with acetate was lower than that needed to inhibit the synthesis of protein, RNA and DNA. Growth inhibition was observed at almost the same concentration of sorbate needed to inhibit macromolecular syntheses. From these data sorbate appears to inhibit respiration primarily, which supports the concept of CoA involvement in sorbate inhibition, because O2 uptake with acetate occurs in participation of CoA.
