Square slices of laminaria ochotensis miyabe was dried in hot-gas current at temperature 50°C by the dryer, and then their tissue, the drying mechanism, the evaporation area and the drying rate were investigated. As the results of moisture change, it may be said that if the drying condition and the initial moisture content are kept constant and the samples to be dried are uniform in thickness, drying time for reducing their moisture content to 20_??_25 per cent is approximately equal. The drying characteristic curve is plotted (drying rate vs. moisture content), drying proceeded in four rate periods, namely, a constant rate period, a first falling rate period, a second falling rate period A, and a second falling rate period B. The shrinkage in evaporating area of sample during such period are shown below the abovementioned rate curves. Here, too, is shown that the shrinkage proceeded in four stages, roughly corresponding to the said four rate periods. In the drying of laminaria ochotensis miyabe, it was observed that the shrinkage in evaporating area was great in the falling rate period and the lipid removed to surface according to removal of moisture by the drying.
