In the Previous papers, the author that diterpenes and sesquiterpenes were present in unsaponified part of fusel oil from rice brandy and the others. Sesquiterpene alcohol was also isolated from unsaponified part of fusel oil as a resultant of alcoholic fermentation of sweet potato or cane molasses. Furthermore, citronellol, α-terpineoll and linallol in sweet potato fusel oil were identified by gas-chromatography and IR spectra. In the present paper, above-mentioned diterpenes are reinvestigated. It is found that they are identical with each other not only from the method of high temperature gas-chromatography but also from NMR, UV, and IR spectra. From those results, it can be conclude that the isoprenoid compounds are fromed as the common metabolites in various alcoholic fermentation with yeast.
