(1) Hydrolysis of soluble potato starch into glucose, maltose, and dextrins by five types of amylase of molds (as previously reported by the author(1)) are investigated by the selective fermentation methods with washed bakers yeasts. The results obtained are shown in Tables 1-5, and Figs. 1-5. There are found remarkable differences in production of these 3 products of starch hydrolysis among these five types of molds. (2) Based upon these data and some assumptions generally accepted, the author calculated out the activity ratios of α-, and β-amylases and maltase of these five types of molds as shown in Table 7. (3) And he proved that the characteristics which had been generally noted concerning various, methods of alcohol industries are due fundamentally to the marked differences in the production curves of fermentable sugars among these five types of molds used as saccharifying agents. (4) Some discussions were added to the reasons of the difference in fermentable sugar production curves of these five types of molds.
