• (1) The distribution of phosphorylase, phosphatase, and β-amylase in the cereals was tested. The distribution of phosphorylase in samples with high β-amylase activities was reëaxmined. (2) Phosphorylase and phosphatase were widely distributed in the cereals without great dif-ferences in their activities. The distribution of β-amylase showed considerable difference among species and high enzyme activities were found with wheat, barley, and rye. (3) Samples with high β-amylase activities, such as those of sweet potato, kuwai, water cress, and soybean, showed high activities of phosphorylase and phosphatase. (4) Significant differences were observed among strains of sweet potatoes in the enzyme activities.
