A partially purified saccharogenic enzyme of sweet potato leaves was prepared. The enzyme preparation indicated more higher saccharification limit on starch and amylose than that of sweet_??_ato juice and crystalline β-amylase of sweet potatoes. These differences suggest that the enzyme may contains either maltase or “gluc amylase”. The late_??_r was proposed by PHILLIPS et al. The presence of maltase in sweet potato leaves was not yet reported. By the above experiments the author showed that the enzyme was unlike giuc amylase, the high saccharification, limit was caused by the maltase action, and the enzyme saccharified the amylose almost entirely to glucoes.
