The distribution of extractive nitrogens of tuna meat (Thunnus Orientalis) was determined with especial reference to, a seasonnl variation. The quantities of monoamino fraction nitrogen di-am no fraction nitrogen vary greatly in accordance with the seasone, and in summer, when the fish spawn and the meat disagreeable, the former nitrogen is increased and the latter is decreased respectively. In winter, however, the meat is favourable, and the nitrogens vary opposite is the case with the former.
