Humans express 〜25 TASR genes on their tongue. Functional, psychophysical, anatomical and genetic evidence is presented to show that TAS2Rs represent physiological bitter taste receptors in human. Moreover, the molecular evolution of these genes points to important roles of bitter taste during human phylogenetic development.
