To get fine taste on cooking the reasonable indication of pepper weight on recipe was studied. The following results are obtained: 1) The real weight of pepper was indicated a small measuring spoon unit or a grain unit and the rough weight of pepper was "sho-sho" or "sho-ryo". 2) The frequency of pepper use was indicated that it varies in accordance with its cooking style. When it was in Western-style 57%, in Chinese-style was 15%, and in Japanese-style only one dish of cuisine was recognized. 3) The real weight of pepper,"hitofuri" or "futafuri" meaning of "one shake of a bottle" or "two shake of a bottle" was statically measured as each 0.05g or 0.10g. 4) A taste differrence between 0% concentration of pepper and 0.008% one was indicatid by sensory evaluation, and it was recognized 0.008% pepper added soup has been preferable than 0% added one.
