The carbohydrates in miso were divided into eight fractions.The sugar components of each fraction have been investigated by the multiple paper chromatography. The sugars detected as the components were as follows : xylose, arabinose, fructose, glucose, galactose, and several oligosaccharides as free sugars; rhamnose, xylose, arabinose, fructose, mannose, glucose, galactose, and (galacto-) uronic acid as the components of soluble polysaccharides; rhamnose, xylose, arabinose, fructose and glucose as the components of glycosides; and glucose, xylose, and arabinose as the components of hemicellulose.
