Investigation of the acetate assimilation of koji-molds with 103 species revealed that they were able to utilize acetate as a sole carbon source, except for a few species. Among them, Aspergillus oryzae FRI-23 gave the best result with respect to cell yield. Further experiments showed that good mycelial growth of this strain was obtained in the range of acetic acid concentraiton 1〜2%, pH 5.9〜6.3,and ammonium concentraiton 0.07〜0.28%. The phosphate concentration hardly affected the growth. A 0.1% addition of growth factor, especially C.S.L. or glucose to the basal medium, stimulated the growth. Crude protein contents of the mycelia and cell yield based on the acetic acid content reached approximately 50% and 38%, respectively, on both media in a jar-fermenter culture, but C.S.L. addition favored both slightly more than did glucose addition. The mycelia contained as little methionine as the other microorganisms and 7〜8% of nucleic acids.
