Change in the growing state of Saccharomyces sp. IFO 2347 immobilized in carrageenan gel beades were investigated. With the incubaton of gel in nutrient medium, weights of gel beads were found to increase and the weight change of gel corresponded to the amount of yeast cells that increased by growing. Scanning electron microscopic observations of the yeast cells immobilized in gel revealed that colonies enlarged with incubaiton and assembled near the gel surface. In addition, micro-interstices were observed on the surface of gel beads only in the stationary growth pahse. Through the interstices release of yeast cells from gel occurred and number of living cells in gel was maintained at a steady state.
