Arylsulfatase activity has been detected in the mold wheat bran of 12 strains of Aspergillus fungi widely used in the Japanese fermentation industry. In a liquid culture containing taurine as the sulfur source a strain of A. oryzae was also found to produce arylsulfatase. It was found that at least three distinct forms of arylsulfatases were produced in the mold wheat bran of A. oryzae. Two distinct forms (arylsulfatase I with an optimum pH of 5.0 and arylsulfatase II, pH 6.7) of arylsulfatases have been partially purified from mycelium pellets of A. oryzae strain A 1-5 grown in a liquid culture. Arysulfatase I and arylsulfatase II have different pH optima, pH and heat stabilities, and their activities are affected differently by inhibitors. The evidence of the existence of a third arylsulfatase with an optimum pH of 8 (arylsulfatase III) is as follows; arylsulfatase activity is also detected in alkaline conditions and arylsulfatase III is not inhibited by molybdate, which strongly inhibits the activities of arylsulfatase I and arylsulfatase II.
