Vitamin B_<12> Production from Soybean Curd Whey with Propionibacterium freudenreichii

Wastes from factories using soybeans were employed as substrates for the production of vitamin B_<12> by Propionibacterium freudenreichii subsp. shermanii ATCC 13673 in microaerophilic conditions. Soybean curd whey served as a better substrate for growth and vitamin B_<12> production of P. freudenreichii than cooking drainings from soystarch and soaking drainings from soymilk did. Addition of glucose (10 g/l), yeast extract (5-10 g/l), riboflavin (50 μg/l) and CoSO_4・7H_2O (12 mg/l) to the soybean curd whey medium enhanced the vitamin B_<12> productivity of this microorganism. The vitamin B_<12> content of P. freudenreichii cells in optimized soybean curd whey medium reached 889 μg/g dry cell, which was higher than in the complete medium (467 μg/g dry cell).
