Energetic Balance and Cellular Composition of Candida utilis in Sugar-limited Chemostat Cultures Based on Nopal Fruit

Cellular composition with respect to protein, carbohydrate, nucleic acids, lipid and ash on the growth of Candida utilis using nopal fruit juice was determined in sugar-limited chemostat cultures. Energetic analyses gave remarkably high values of true growth yield-Y_G=115 (g cell/mol glucose) and Y_<GO>=62 (g cell/mol O_2)-, and favorably low values of maintenance coefficients-m=0.25 (mmol glucose/g cell/hr) and m_0=1.7 (mmol O_2/g cell/hr).The mass balances with respect to oxygen and carbon for sugar consumed were studied to investigate the efficiency of the carbon source utilization on the growth. It was suggested that the sugar consumed was converted to mainly for biomass synthesis for D≲0.3 (1/hr) while some metabolites might be accumulated in the broth for D>0.3 (1/hr).
