The author examined the artificial infection Botrytis on wine grapes, in order to improve wine making. At first, several strains of B. cinerea-like fungi were isolated from Yoichi farm of grapes. From these strains, the most suitable strain KF-1-1 was selected. KF-1-1 was determined to be B. cinerea by a taxonomical study. Prior to the inoculation of KF-1-1,the grapes were soaked in potassium metabisulfite solution, and washed with water. The inoculatoin amount of KF-1-1 was 5x10^4 spores/kg of grapes. The suitable incubation temperature ranged from 15 to 20℃ with more than 95% moisture. Light was also needed for the production of noble-putrefied grapes. As results of noble-putrefation, concentration of sugar and glycerol in grape juce increased markedly.
