ABSTRACT : The dietary nutrient standards was defined on the survey of medical characters of the hospitalized patient, referred to elemental standards generally recommended, at the hospital which had been offering a meal classified according to the diseases. (1) The object was a general hospital of emergency appointment with dialysis treatment center, and provides 64 beds, and more 47 beds for dialysis dedicated. Hospitalized patient were 12 men and 20 women (F>M), 60% of them were in fifties to sixties, and many were in long-term care. (2) 129 meals were prepared per day, general balanced diets 18.9%, for dialysis 42.9% for other special therapeutic diets 32.7%. More ”non-general” abounding than ”general” caused inefficient cooking works. (3) Dialysis patient in hospital were 67±9-year-old and 152.1cm height on an average, standard mean weight was 51.1kg for their recommendations. (4) Trial nutrition standards defined General balanced and Special therapeutic diet, then established EC (energy-controlled), PC (protein-controlled), FC (fat-controlled), and other-controlled diets by elemental nutrition requirements, which were adequate to nutritional needs of each and every resident on the basis of data from hospitalized patient and some known guidelines.
