The amounts of reducing sugar, tannin and caffeine of Pu-Erh tea leaves were compared with those of black and green tea leaves after the leaves were extracted with hot water for 5 min. The total amounts of reducing sugar and tannin in the extracts of Pu-Erh tea leaves were far less than those of black and green tea leaves, while the amounts of caffeine were not significantly different one another. When the antioxidative activities of the three extracts were compared using linolenic acid as substrate, the activity of Pu-Erh tea extract was higher than that of black or green tea extract. The reducing principles, P-I and P-II, isolated from Pu-Erh tea leaves inhibited not only the autoxidation of linolenic acid but NADPH-dependent lipid peroxidation in rat liver mitochondria and microsome. The antioxidative activity of P-II was higher than that of P-I in all cases mentioned above.
