The amount of water-soluble, colored compounds and ashes in the water extracts of Pu-Erh tea leaves was compared with those of black or green tea leaves to characterize the constituents of Pu-Erh tea. The extraction of tea leaves by hot water was repeated five times. The amount of water-soluble compounds obtained by the first extraction from Pu-Erh tea leaves of various grades was less than that from black or green tea leaves. However, the extracts by the second, third, fourth and fifth extraction from Pu-Erh tea leaves were approximately the same amount as those from black or green tea leaves. The amount of ashes in the extracts from Pu-Erh tea leaves was larger than that from black or green tea. The absorbancy at 460 nm of the hot water extracts of Pu-Erh tea leaves was higher than that of other tea leaves, and the absorption intensity was almost proportional to its grade. Hot water extracts were shaked with methyl-iso-butylketone, and the water layer was chromatographed through Sephadex LH 20 for the isolation of colored compounds of the absorption maximum at 460 nm. Two colored fractions which were characteristic of Pu-Erh tea were obtained.
