Changes of the pattern in freezing curves accompanying stem maturation were investigated in twig pieces of Forsythia koreana, Castanopsis cuspidata and Cleyera japonica. Freezing curves for the immature twig pieces invariably showed single exotherm (latent heat release caused by freezing), while those for the mature ones had two exotherms. The type of freezing curves corresponded closely to the extent of maturity in twigs and was probably dependent on structural changes in tissues of stems that accompany maturation. Single exotherm in immature twigs is dependent on continuous freezing throughout the whole stem, whereas two exotherms in mature ones are dependent on discontinuous freezing or impeded ice propagation in different tissues or tissue systems.
