Influence Factors on the Carnitine Content in Beef

High contents of total carnitine were detected from beef of cattle advanced by months of age. Especially, the rise of free carnitine content which depended on aging was remarkable. The multiple regression between the total carnitine content and four independent variables (months of age, daily gain, moisture, and hematin) was analyzed. The ratio of contribution of the moisture content and the hematin content was small. Months of age and daily gain were significantly selected, and the multiple regression « [total carnitine (mg/100g) ] =1.11× [months of age (months) ] -28.10× [daily gain (kg/day) ] +83.19» was obtained. Because a general beef cattle excluding the examination did not obtain information on daily gain, the daily gain was replaced with the second power of months of age, as a independent variable. The ratio of contribution of the moisture content and the hematin content was small. Months of age and its second power were significantly selected, and the multiple regression « [total carnitine (mg/100g) ] =-0.0073× [the second power of months of age (months) ] +2.05× [months of age (months) ] +45.61» was obtained.
