Effects of plane of nutrition on the growth of the major carcass tissues and the change of carcass composition in Japanese Brown steers

Total 41 Japanese Brown steers were used. 32 steers (H) were fed the concentrate and roughage ad libitum, and slaughtered at from 6.2 to 31.6 months of age. Another 9 steers (M) were fed limited amounts of the same rations from about 10 months of age so that they would attain 0.7kg daily gain, and slaughtered at from 14.9 to 30.0 months of age. Carcasses in a side were separated into 9 blocks, 24-48 hours after slaughter, in which tissues weight of bone, muscle and fat were determined. The growth patterns of the tissues were analyzed using the regression models of intersecting straight lines by Ootsuka (1975) .<BR>Little difference was noted in bone growth on an age basis, but the growth rate of bone in M was greater than that in H prior to 173kg of CW on a CW basis. After that the growth rate in H steers was greater than in M steers. These indicated that bone growth was related more closely to animal age than to the nutritional treatments imposed.<BR>No considerable difference was noted in muscle growth on an age basis, except slightly lower growth rate in M than that in H till about 21 months of age. However, on a CW basis M steers had more muscle than H steers from 129kg of CW. It appeared that muscle growth was related more closely to animal age than nutritional levels, as well as bone.<BR>Effect of plane of nutrition on fat deposition was greatest among three tissues, and H steers had more fat than M steers in whole period on all bases. The rate of fat deposition in M was extremely low till 16.8 months of age and 167kg of CW, and then rapidly increased.<BR>From these results, it is suggested that the carcass with less fat can be produced by restriction of nutritional level, which needs more duration of fattening.
