Two bulk samples of imported raw shelled peanuts naturally contaminated with aflatoxigenic Aspergillus flavus were kept under three different conditions in commercial warehouses. During the storage period, environmental temperature and relative humidities, water activity and free fatty acids of the samples, and aflatoxin concentration and fungal flora were determined at monthly intervals.The samples stored from fall to winter showed no significant accumulation of aflatoxin, even though Aspergillus species including A. flavus, A. niger and Eurotium spp. were present. The level of free fatty acids of the samples remained unchanged for 5 months.During summer to fall, peanut samples contained detectable levels of aflatoxins. However, the variation of aflatoxin levels was small under these conditions after six months, storage. Seasonal changes in humidity caused a decrease in fungal species included A. flavus. Accumulation of free fatty acids was observed during storage at relatively high temperature.Experimental studies of aflatoxin production on raw shelled peanuts were carried out in the laboratory. The peanuts were inoculated with A. parasiticus ATCC 15517 (an aflatoxigenic strain) and kept under various conditions. Aflatoxins were found after incubation at 100% R. H. and 25°C for 2 months. However, growth of aflatoxigenic fungi and the production of aflatoxins were not observed during storage for the same period at relative humidities of 79% or less at 25°C.
