Investigations on the antimicrobial action of addition compounds, Na2HPO4·H2O2 and Na4H2O7·2H2O2, were carried out in aqueous solution.(1) The action of hydrogen peroxide on microorganisms was not affected by the phosphates. The antimicrobial action of addition compounds was found to be shown by hydrogen peroxide of these compounds, and there was no difference in the anticrobial activity between addition compounds and hydrogen peroxide at the same concentration as of H2O2.(2) The preservative properties of the addition compounds on soybean curd were similar to those of hydrogen peroxide.
