This experiments were done to investigate the effects of population density on quality of broiler-type chicken muscles. Only female chickens were bred for 9 weeks in an open house at Okayama Pref ectural Poultry Breeding Station, in summer (Exp. 1), in early autumn (Ext 2), and in autumn (Exp. 3), 1980. These chickens were divided into two groups, 1st group was 15 chickens per 3.3 m2 (A group), and 2nd group was 60 chickens per 3.3 m2 (B group), respectively. Changes of the average feed intake and body weight gain were investigated in the course of development and their pectral muscles were prepared for studying the postmortem changes. Average feed intake and body weight gain were decreased with increasing the population density. The changes of pH of each pectral muscle were less in (B) group than in (A) group. Each of pectral muscle, which was stored for about 8 month at -25°C, showed the same pH changes as the samples before freezing. In early postmortem phase, the ratio of the myofibrillar fragment formation in (B) group was higher than that of the (A) group, but in later phase, these relation were opposite to it. The differences in changing of pH and myofibrillar fragment formation rate were clearly recognizable in Exp. 1 than in Exp. 2, or in Exp. 3. Extractability of water-soluble and TCA-soluble components from a defrosting muscle (Exp. 2) was measured under the various pH condititions. The water-soluble ones were more easily extracted under the higher pH condition than the lower pH condition. On the other hand, the TCA-soluble ones were lesser extracted under the high pH condition. Both of (A) group and (B) group muscles were contained almost the same misture contents.These results show that the increase in population density suppressed the development of the muscles of chicken, and therefore some differences in velocity of post-mortem changes were occured in the chicken pectoral muscles, especilly in preparation bred in summer season.
