1. Potato soluble starch produced a considerable amount of glucose and no maltose, when degradad by the acid-treated Taka-diastase solution which has rich maltase activity and only a trace of a-amylase activity. The iodine reaction persisted to be of blue-violet color in this degradation. (Fig. 1). Therefore the Taka-diastase was not found to contain an enzyme comparable to the malt β-amylase, but it was proved to contain a special amylase (similar to the glucogenic enzyme system found in Rhizopus by CORMAN and LANGLYKKE in 1948). 2. The data of alcohol fermentation-of potato soluble-starch mashes were given in Table 2 and Fig. 3 with sacchariffing agents of different enzymic ratios (by treated Taka-diastase). It was shown that a high alcohol yield was obtained usually, when the ratio of α-amylase activity to maltase activity was small in sacchariffing agent. Alcohol yields were shown to have a higher correlation with maltase activity (accompanied by limit-dextrinase activity) rather than with α-amylase activity.
