Temperature-time relation for oval cans in beating was calculated with respect to their centre. For sufficiently large values of t, the time of heating, the following relation was obtained:- ln (θe-θ)=λkt+const. where λ=(π/2c)2+4/l2μ and μ=-0•3257+0•2572a+b/a-b-0•0076(a+b/a-b)2 for 2<a+b/a-b<6. θ: temperature at the centre of oval can, θe: retort temperature, k: thermal diffusivity of the content, 2l: focal distance of the ellipse, 2a: majoc axis, 2b: minor axis, 2c: height of the can. λ and μ for ordinary oval cans were calculated as shown in Table 1. The values of thermal diffusivity of some marine products, obtained by applying the above formula to the observational data, are listed in Tabl 2.
